SPICY CHICKEN ON BLACK RICE WITH HANDLE AND ORANGE

Yerbal spices used: ground ginger, ground cinnamon, cumin, green anise and ground cayenne.

– Ingredients (4 people):
200 g of black rice
2 half chicken breasts
1 mango, cut into cubes
1 orange juice
Half lime juice
2 tablespoons of honey
2 teaspoons cornstarch
1 teaspoon ground ginger, 1/2 teaspoon cinnamon, 1/4 teaspoon cumin, 1/4 teaspoon green anise and a pinch of ground cayenne Yerbal
Salt to taste
– In a small bowl, mix all spices Yerbal and salt. With the mixture, season the chicken breast and bake for 25-30 minutes in a preheated oven at 200 ° C.
– Cook the black rice following the instructions of the container and reserve.
– In a saucepan over a fire, boil the orange juice, the lime juice and the mango. When it breaks to boil, lower it to a simmer, add the honey and the cooked rice and let it reduce 4-5 minutes. Salt-pepper to taste.
– Dissolve the cornstarch in a finger of water and pour the mixture into the saucepan. Do not stop stirring while thick.
– Serve the rice accompanied by the chicken breast.
